If you want to volunteer work for ecological projects there is a group called Global Volunteers that run programmes in New Zealand. One programme is based in Wellington. It is not cheap but participants are kept busy with volunteer work (eg. planting trees, building walking tracks) as well as the usual tourist/backpacker activities.
